My version of Sweet and Sour Ribs ็ณ–้†‹ๆŽ’้ชจ ๐Ÿคค

Off the bone tender, flavourful and goes super well with rice ๐Ÿ‘๐Ÿป we loved it! It's also super easy to make, a true one pot dish, all done in the thermal cooker ๐Ÿ˜Ž๐Ÿ˜



๐Ÿ“Ingredients :

  • 350+g prime ribs
  • 3 shallots, minced
  • ginger, minced
  • 3 garlic, minced
  • 1 cinnamon stick
  • 1 star anise

๐Ÿ“Sauce :

  • 2 tbsp brown sugar
  • 1-2 tbsp vinegar
  • 125ml rice wine
  •  ยพ tbsp hoisin sauce
  • ยฝ tbsp oyster sauce, to taste
  • 1 tbsp light soy
  • abit of thick dark soy, 5o taste

๐Ÿ“Method :

  1. ๐Ÿ‘†๐Ÿป Sear ribs until brown. Set aside.
  2. ๐Ÿ‘†๐Ÿป Using pan juices, fry cinnamon, star anise, garlic, shallot and ginger until very fragrant.
  3. ๐Ÿ‘†๐Ÿป Add in ribs, sauce mixture and water to cover ribs completely.
  4. ๐Ÿ‘†๐Ÿป Boil for about 10 mins and transfer to outer pot for about 8 hours.
  5. ๐Ÿ‘†๐Ÿป Before serving, bring to boil over medium heat and reduce sauce until sticky. It took about 10 mins.

I cooked this in the morning and we had it for dinner ๐Ÿฝ๏ธ๐Ÿ˜…

๐Ÿฝ๐Ÿ„ Steamed Pork and Mushroom Balls

Anyhow dinner that turned out nice!โœŒ๐Ÿป We love the meatballs so much!๐Ÿคค They are super juicy and flavourful, definitely going to be a very frequent dish for dinner from now on ๐Ÿ˜‹ I cooked the meatballs on top of the soup in TP ๐Ÿ’ช๐Ÿป


๐Ÿ“ Recipe : (I used a normal metal spoon for measurement)

  • 200g minced pork, I used shoulder butt ไบ”่Šฑ่‚‰ which has a good mix of fats
  • 6 small shitake mushrooms
  • 2 shallots, chopped
  • chopped water chestnuts, optional
  • chilli padi, optional
  • ยฝ tbsp oyster sauce
  • ยฝ tbsp light soy
  • ยฝ tbsp fish sauce
  • drizzle of sesame oil
  • pepper
  • ยฝ tbsp corn flour

๐Ÿ“Method :

  1. Mix everything together and form into meatballs. 
  2. Top with chilli if preferred.
  3. Place them on the upper tier of a 2.5L LG thermal cooker.
  4. Stack on top of soup/water and cover the lid. 
  5. Turn on low heat.
  6. When it starts boiling (there will be steam coming out the sides), continue cooking for 5 mins.
  7. Transfer to outer pot for about 1 hour.
(I had one extra ball so I added it into my soup)

Thai Basil Pork Rice Set

This is a dish that i have cooked before but I am revisiting it now and making some improvements to it. The main changes that iโ€™ve made is changing the chilli to chilli padi as Ben is starting to handle spiciness much better now, and also the addition of fish sauce. I used to be reluctant to use fish sauce as i was afraid that Ben would not be able accept the taste since it smells so horrible from the bottle. However, i realised that if used correctly, it can really enhance the flavours of a dish without tasting like what it smells, haha! Ben doesnโ€™t even know that it is in his food! Haha! This is an easy one-dish meal recipe that is yummy and hassle free. I love the flavour combination, itโ€™s sweet, salty, spicy with a nice kick! I especially the fragrance of the basil!


Ingredients :

  • 3 cloves garlic, chopped
  • 3 shallots, sliced
  • 200g minced pork (a mixture of lean and fatty cuts)
  • 2-4 chilli padi, chopped
  • 2 tbsp fish sauce
  • 1 tbsp kecap manis (sweet soy sauce)
  • 1 tsp sugar
  • 1 tsp thick dark soy sauce
  • Pepper
  • Handful of basil leaves

Method :

  1. Heat oil and fry garlic and shallots until fragrant.
  2. Add in pork and break up as you fry.
  3. When pork is half cooked, add in chilli.
  4. Add in sauces and seasonings and toss well.
  5. Add in basil leaves and turn off heat when it wilts.
  6. Serve with sunny side-up and rice.

Taiwanese Lu Rou Fan (Braised Pork Rice) ๆปท่‚‰้ฅญ

Another dish off my โ€œto-improve listโ€! I added more depth of flavour this time by adding fried shallots and garlic into this dish. It was the best idea that iโ€™ve ever had! Itโ€™s savoury, a little spicy, a tad sweet and extremely fragrant. I am very happy with this recipe and Iโ€™ve even made an extra bowl for my brekkie tomorrow. Itโ€™s that good!


Ingredients :

  • 250g โ€“ 300g pork belly, sliced in thick pieces
  • 2 star anise
  • 1 tsp five spice powder
  • 5 shallots, sliced
  • 5 cloves garlic, chopped
  • Sauce mix: 1/8 cup light soy sauce, 1/8 cup hua diao wine, 2 tbsp dark soy sauce, 1 tbsp thick dark soy sauce
  • 1 heaped tbsp of rock sugar cubes
  • 300ml water
  • 2 firm tofu squares
  • 2 hard boiled eggs
  • 4 chilli padi, whole
  • Chye sim or bak choy, blanched
  • Rice

Method :

  1. Fry shallots and garlic until golden and crispy. 
  2. Dish up onto paper towels.
  3. Add pork to a pan and fry until lightly brown.
  4. Add in five spice and star anise and fry until fragrant. 
  5. Add in fried shallots and garlic and toss well.
  6. Pour in sauce mix and rock sugar.
  7. Pour in water and bring to boil.
  8. Add in firm tofu and hard boiled eggs.
  9. Cover and simmer for 30 minutes. Stir occasionally. 
  10. In the last 15 minutes, add in chilli padi (whole).
  11. Slice tofu and half the eggs.
  12. Serve with steamed rice and Chye sim, with plenty of sauce.

Hotplate Tofu ้“ๆฟ่ฑ†่…

๐Ÿ“Ingredients : 

  • 125g minced pork
  • Pork marinade: 1 tsp cornflour, 1 tsp light soy, pepper, ยผ tsp pink salt
  • 2 cloves garlic, chopped
  • 1 tsp samsui ginger sauce OR small ginger, chopped
  • ยฝ stick carrot, sliced
  • 3 baby corn, cut
  • Canned mushrooms, sliced
  • Sauce mix: 1 ยฝ tbsp chilli bean paste, 1ยฝ tbsp oyster sauce, 1tbsp light soy, 1 tbsp huadiao wine, 1 tbsp coconut sugar, pepper
  • 200ml water
  • Corn flour mixed with cold water
  • Spring onions
  • 2 tubes if egg tofu, sliced thickly
  • 2 eggs, to cook on hotplate

๐Ÿ“Method :

  1. In a 1.6L thermal cooker, heat oil and fry garlic and ginger until fragrant.
  2. Add in pork and break it up as you fry.
  3. When pork is cooked, add in water, sauces and seasonings. 
  4. Bring to boil.
  5. Add in veggies and bring to rapid boil.
  6. Transfer to outer pot for at least 20mins. 
  7. I left it inside for 5 hours and it was still very hot.
  8. Bring to boil and reduce the liquid to about half. 
  9. It took about 5mins while I was frying the tofu.
  10. Add spring onions. 
  11. Thicken sauce with corn flour slurry.
  12. Shallow fry tofu until golden.
  13. Heat hotplate until very hot and rub with oil. 
  14. Cook scrambled eggs.
  15. When eggs are 80% set, top with tofu and meat&veggie sauce.
  16. Top with spring onions.

Sweet and Sour Pork ๅ’•่€่‚‰

Ingredients :

  • 4 cloves garlic, chopped
  • 1/2 large onion, sliced
  • 2 pineapple rings, cubed
  • 1/2 small red pepper, diced
  • 1/2 small green pepper, diced
  • 1/2 cucumber, cut in chunks
  • Pork:
  • 250 โ€“ 300g of pork shoulder butt, cut into cubes
  • 1 tsp light soy sauce
  • 1 tsp rice wine
  • 1 tsp corn flour

Batter :

  • 1/2 cup plain flour
  • 1/4 cup corn flour
  • 1 tsp baking soda
  • pinch Salt
  • 1 tsp cooking oil
  • 1 egg
  • 1/2 cup water
  • Sauce:
  • 5 tbsp tomato sauce
  • 1 tbsp sugar
  • 2 tbsp white vinegar
  • 2 1/2 tbsp soy sauce
  • 1 tsp ginger sauce (optional)

Method :

  1. Marinade pork and set aside in the fridge for a few hours.
  2. Mix batter until smooth. 
  3. Coat marinated pork in batter.
  4. Deep fry in hot oil, over medium heat until cooked through. 
  5. When all the pork is cooked, fry it again over high heat until golden brown.
  6. In a hot wok, fry garlic until fragrant.
  7. Add in pineapples and peppers. 
  8. When you can smell the fragrance of the peppers, add in cucumbers and onions. 
  9. Fry until cucumbers is translucent.
  10. Add in sauces and seasonings and allows sauce to bubble and thicken.
  11. Add in crispy pork and toss until combined.
  12. Serve immediately.

Lor Mee

I love every thing about this dish. From the tender braised pork, to the crispy fish and wantons, homemade noodles, and flavourful gravy! I absolutely loved our dinner! I followed my previous recipe with the addition of fried toman fish slices and wantons. The taste of the fried fish and wantons with the gravy is really yummy! I am inspired to make fried fish bee hoon next now ๐Ÿ˜€


Home Made Recipe


Ingredients :

  • 200g toman (snakehead fish), sliced
  • 1/4 tsp salt
  • Pepper
  • Drizzle of sesame oil
  • 2 tbsp plain flour
  • 1 egg white

Method :

  1. Mix all ingredients together, coating the fish well.
  2. Fry in hot oil until golden

Lor Mee with Thermal Cooker - Recipe


Ingredients: (Serves 4)

  • 1L water
  • 250ml dark soy sauce
  • ยผ cup rock sugar cubes
  • 6- 7 garlic cloves, skin on
  • 1 medium ginger, peeled and sliced
  • 1 tbsp five spice powder
  • 500g pork belly (whole)
  • Hard boiled eggs
  • ยผ tsp salt
  • 2 tbsp sugar
  • 2 tbsp Chinese black vinegar
  • 3 eggs, beaten
  • ยฝ cup corn flour mixed with some water
  • Yellow noodles
  • Bean sprouts
  • Minced garlic, chopped Chinese celery and chilli, to garnish
  • More black vinegar as topping, to taste

Method:

  1. In a 3L thermal pot, add in 4 cups water, dark soy, rock sugar, garlic, ginger and five spice. 
  2. Mix well and bring to boil.
  3. Season with salt, sugar and vinegar.
  4. Add in pork belly, cover and cook for about 15 minutes.
  5. Add in hard boiled eggs during the last few minutes.
  6. Bring to boil and transfer to outer pot. 
  7. Leave it for about 8 hours.
  8. When ready for dinner, remove garlic, ginger, pork belly.
  9. Slowly stir in eggs into the boiling liquid.
  10. Add in corn flour mixture slowly while stirring until thickened.
  11. Gravy is now ready.
  12. Slice pork belly.
  13. Cook noodles and bean sprouts and place in a bowl.
  14. Top with gravy, pork belly, hard boiled eggs, minced garlic, Chinese celery and chilli.
  15. You may serve this with your favourite toppings. 
  16. Examples are fishcake, ngoh hiang, fried wantons, fried fish.

Lychee Pork ่”ๆž่‚‰

Ingredients :

  • 250g minced pork (marinated in pepper, salt, 1 heaped tbsp corn flour, chopped garlic and 1 egg)
  • 3 cloves garlic, chopped
  • 1 large red onion, cut in big chunks
  • 2 small bell peppers, cut in chunks
  • about 8 lychees

For the sauce : (I used Chinese soup spoons as measurement)

  • 5 tbsp tomato sauce
  • 1 tbsp sugar
  • 2 tbsp white vinegar
  • 2 1/2 tbsp soy sauce
  • 10-12tbsp of lychee juice, to taste (about 150ml)
  • about 2 heaped tsp of ginger, finely chopped

Method :

  1. Form little flat balls of meat patties with the mince. 
  2. Pan fry until both sides are golden. Set aside.
  3. In a hot wok, fry garlic and onions until fragrant. 
  4. Add in lychees and all the sauce. (I mixed all my sauces and seasonings in a bowl beforehand.)
  5. Bring sauce to boil and add in meat patties as well as bell peppers. 
  6. Toss well.
  7. On medium-high heat, let meat cook in the sauce for about 5 minutes.
  8. Thicken sauce with some water mixed with 1tbsp of corn flour.
  9. Serve with chopped spring onions and coriander.

One of Bennyโ€™s favourite meals ๐Ÿคค Ever since Benny tried Hainanese pork chops, he would not eat any other types of crispy pork ๐Ÿ˜… so so crispy, tender and fragrant, I guess Chinese style ftw ๐Ÿ’ช๐Ÿป๐Ÿ‘๐Ÿป


Cooked rice and curry in a thermal cooker each, easy peasy ๐Ÿ˜Ž if you have trouble with jap curry, I used the brand in the photo. Half a big box, 500ml water, 1 potato, 1 carrot and onions. Bring to boil for a few mins until thickened. Transfer to outer pot for at least 30mins, done! ๐Ÿ‘๐Ÿป


๐Ÿ“Ingredients:

  • About 250g pork chops, pounded and tenderised (2 thick pieces)
  • ยฝ tsp pink salt
  • 1 tsp sugar
  • 1 large egg, beaten
  • 2 tbsp milk
  • ยฝ tbsp corn flour
  • Dash of black pepper
  • about 100g cream crackers, crushed

๐Ÿ“Method:

  1. Mix everything together except for crackers. 
  2. Marinate pork for about 15mins.
  3. Coat with cream crackers and fry until golden.


Thai Basil Mince Pork

Ingredients :

  • About 260-280g mince pork (a mixture of lean and fatty meat)
  • 3 cloves garlic, chopped
  • 3 shallots, thinly sliced
  • 2 large red chillies (Chilli padi if you are really good with spice)
  • Dash of black pepper
  • Handful of sweet basil, cut in chunks
  • 1 1/2 tbsp light soy sauce
  • 1 1/2 tbsp sweet soy sauce (kecap manis)
  • 1/2 tbsp sugar

Method:

  1. Heat oil in a hot wok, and fry shallots and garlic until fragrant.
  2. Add in mince and break up as you fry.
  3. When meat is lightly browned, add in soy sauce, sweet soy sauce, sugar and pepper.
  4. When meat is almost cooked and liquid is reduced to almost none, add in chillies and sweet basil.
  5. Fry until cooked.
  6. Best served with steamed rice


Salted Egg Minced Pork Patty

Salted Egg Minced Pork Patty ๅ’ธ่›‹่‚‰้ฅผ and Teochew Sweet potato porridge. Having the same kinda food Ah Ma cooked for me when I was growing up, I will pick this meal with her over any expensive restaurants ๐Ÿ’‹

I bought Mommy and Ah Ma the 2.5L La Gourmet cooker cos itโ€™s so amazing and I know it will make their lives better! โค๏ธโค๏ธ Steamed the pork patty on top of the porridge, easy peasy and very yummy! ๐Ÿ˜‹


๐Ÿ“Recipe :

  • 150g minced pork
  • 1 tbsp light soy
  • sesame oil
  • pepper
  • 1 salted egg white

  1. ๐Ÿ‘‰๐ŸปMix everything together. 
  2. I topped it with chopped salted yolk ๐Ÿฅš๐Ÿ˜
  3. ๐Ÿ‘‰๐ŸปPlace insert on top of porridge and bring to rapid boil and transfer to outer pot.
